Про настойки. На правах заядлого гостя. Настойки в кулинарной книге современных русских кабаков играют ту же роль, что и соусы во Франции. Подавая один и тот же набор блюд с разными настойками, можно растить количество сочетаний в геометрической прогрессии. Что дает завсегдатаям повод попробовать новое, а свежую публику приятно удивляет и якорит. Поэтому меню настоек должно в обязательном порядке строиться с оглядк…

Мало кто знает, что у библиофилов, как и у рыбаков, есть прикормленные места. Одно из моих — БукВышка на Мясницкой в Москве.
