А вот пример анти-тартара по-Питерски. Нарезка. Смысл тартара в том, что он весь однородно порублен. Когда нужно что-то дорезать ножом в тарелке, встает вопрос - зачем все это? Яблоко! Не ароматное, и не кислое, простое, как... яблоко. В тартар добавляет ноль смысла. Щавель красножильный горчит, разваливает весь вкус блюда. Заправки нет. Спасибо хотя бы за лайм. Тунец сам по себе безупречный. В общем, очень по-питерс…

Тартар из тунца - это какое-то бесконечное пространство вариантов. Лучшая версия на сегодня выглядит так: Тунец Шалот Сок лайма Авокадо Черри Клубника Оливковое масло. Забыла мяту, но без нее тоже все сложилось. Фото нет, потому что как можно запечатлеть симфонию на фото?

Когда мне в 10 утра в ресторане подают меню с летними предложениями по игристрому раньше, чем меню завтраков, я испытываю смешанные чувства. Возмущение: "Я что, похожа на человека, который начинает утро с шампанского?!" Лестно: "Надо же, я похожа на человека, который начинает утро с шампанского". В ресторане Umayya в Касабланке был такой тартар из тунца с киви и фундуком,что я онемела от восторга. А у меня черный пояс по тартарам из тунца, меня в них сложно превзойти. Украла, воспроизвела, делюсь: тунец, киви, жареный фундук, мята, шалот, сок лайма, оливковое масло, жареный кунжут. Фундука нужно немного, 3-4 кусочка для оттенка, а киви лучше брать твердые и кислые. Великолепно.

Вы спрашивали о Копи Лювак, коллеги, а мне случайно попался дрип оного. Упаковка солидная: каждый дрип запечатан в пакетик вакуумом и живет в индивидуальной коробочке. Но даже вся эта возня не помогла сохранить аромат - или он изначально был такой - из дрипа пахнет слабо, неярко, кофейной пудрой без акцентов. В одном дрипе 10 гр. кофе, при этом воды рекомендуют пролить всего 50 гр. после смачивания. На вкус неплохо: …
