756. Из одной из банок получились вяленые лактоферментированные сливы и пудра из высушенных шкурок лактоферментированных слив. Рецепт, разумеется, из гайда по ферментации Noma, где еще взять что-то настолько же странное. Сливы ферментируются с 2% соли от веса слив (+я доливала еще немного воды, так как мои сливы сдаваться не желали) дней 5-7 в завсимости от температуры в комнате, потом высушиваются отдельно в дегидр…
